Black Poison Candy Apples

Prepare the apples:
Wash and thoroughly dry the apples, removing any wax coating. Insert a candy apple stick or wooden skewer into the stem end of each apple. Set aside on a parchment-lined baking sheet.

Make the candy coating:
In a medium saucepan, combine the sugar, corn syrup, and water.
Cook over medium heat, stirring gently until the sugar dissolves.
Once the sugar has dissolved, increase the heat to medium-high and bring the mixture to a boil. Do not stir.
Cook until the mixture reaches 300°F (150°C) on a candy thermometer, also known as the hard-crack stage.
Remove the saucepan from heat and carefully stir in the black gel food coloring and vanilla extract (if using). Be cautious, as the mixture is extremely hot.

Coat the apples:
Working quickly, tilt the saucepan and dip each apple into the black candy mixture, turning to coat the apple evenly.
Allow any excess candy coating to drip off before placing the apple on the parchment-lined baking sheet to harden.
Repeat with all apples.

Cool and serve:
Let the apples cool completely at room temperature until the candy coating hardens.
Serve as a spooky Halloween treat, or wrap them in cellophane for party favors!
