Ingredients:

Brownie Layer:
– 1/2 cup unsalted butter, melted
– 1 cup granulated sugar
– 2 large eggs
– 1/2 cup all-purpose flour
– 1/3 cup cocoa powder
– 1/4 tsp salt
– 1/4 tsp baking powder
– 1 tsp vanilla extract

Cheesecake Layer:
– 16 oz cream cheese, softened
– 1/2 cup granulated sugar
– 2 large eggs
– 1 tsp vanilla extract

Blueberry Sauce:
– 1 1/2 cups fresh or frozen blueberries
– 1/4 cup granulated sugar
– 1 tbsp lemon juice
– 1 tbsp cornstarch mixed with 2 tbsp water
Directions:

1. Preheat and Prep: Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan to ensure your Blueberry Brownie Cheesecake doesn’t stick.

2. Make the Brownie Layer: In a medium bowl, whisk together the melted butter and sugar until well combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

3. Combine Dry Ingredients: In another bowl, sift together the flour, cocoa powder, salt, and baking powder. Gradually add these dry ingredients to the wet mixture, stirring until just combined. Pour the brownie batter into the prepared pan and spread it evenly.

4. Bake Brownie Layer: Bake for 15-20 minutes, until the brownie layer is set but not fully cooked. Allow it to cool slightly.

5. Prepare Cheesecake Layer: In a large bowl, beat the cream cheese and sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Pour the cheesecake mixture over the cooled brownie layer.

6. Bake Cheesecake Layer: Bake for 35-40 minutes, until the cheesecake is set and slightly golden around the edges. Let it cool completely, then refrigerate for at least 4 hours or overnight for the best results.

7. Make Blueberry Sauce: In a saucepan over medium heat, combine the blueberries, sugar, and lemon juice. Cook until the blueberries release their juices and the mixture begins to simmer. Add the cornstarch mixture and cook until the sauce thickens.

Serve:

8. Top and Serve: Once the cheesecake is thoroughly chilled, top it with the blueberry sauce before serving.

Enjoy this decadent Blueberry Brownie Cheesecake, a dessert that perfectly blends the rich flavor of brownies, the creamy texture of cheesecake, and the fresh taste of blueberries!
