1. Preheat the Oven:
Preheat your oven to 350°F (175°C).
2. Cook the Ground Beef:
In a large skillet, cook the ground beef over medium-high heat until it’s browned and crumbled. Drain any excess fat from the pan.
3. Add Aromatics:
Add the chopped onion and minced garlic to the cooked ground beef. Sauté for about 2-3 minutes until the onion becomes tender.
4. Season and Combine:
Stir in the taco seasoning mix, chopped green chilies, and water. Cook the mixture for a few minutes until everything is well combined and heated through.
5. Layer the Casserole:
In a greased 9×13-inch baking dish, place two flour tortillas as the bottom layer. Cut them to fit the dish if needed. Spread half of the refried beans over the tortillas. Add half of the ground beef mixture and sprinkle with half of the shredded cheddar cheese. Repeat these layers once more.
6. Bake the Casserole:
Place the casserole in the preheated oven and bake for approximately 25-30 minutes, or until it’s hot and bubbly, and the cheese is nicely melted and slightly golden on top.
7. Serve: Once out of the oven, let the casserole sit for a few minutes before slicing and serving.
8. Add Toppings:
If desired, top individual servings with sour cream, salsa, diced tomatoes, sliced black olives, and sliced green onions.
