Cheesy Zucchini Bake

    1. Prepare the Zucchini:
      • Grate the 5 zucchini and place them in a bowl. Add a pinch of salt and let them drain for 10 minutes to remove excess moisture. After draining, squeeze out any remaining water.
    2. Mix the Batter:
        • In a separate bowl, beat the 3 eggs. Season with salt and pepper to taste.

       

      • Add the drained zucchini to the eggs and mix well.
      • Gradually add 120g of wheat flour to the mixture, stirring until well combined.
    1. First Bake:
        • Preheat your oven to 360°F (180°C).
        • Spread the zucchini mixture evenly in a baking dish.
        • Bake for 15 minutes.

       

    2. Add Cheese and Toppings:
        • Remove the dish from the oven and sprinkle 80g of shredded scamorza cheese (or another cheese) evenly over the top.
        • Arrange thin slices of the small zucchini on top of the cheese.

       

      • Drizzle with olive oil and sprinkle with oregano to taste.
    3. Final Bake:
        • Return the dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and golden brown.

       

    4. Serve:
      • Let the dish cool slightly before serving. Enjoy it warm as a light meal or side dish.
