Instructions:

Cook the penne pasta according to package instructions until al dente. Drain and rinse with cold water to cool completely.

Grill, bake, or pan-sear the chicken breasts until cooked through. Allow to cool slightly before chopping or shredding into bite-sized pieces.

In a large salad bowl, combine the cooled pasta, chopped chicken, romaine lettuce, cucumber, carrots, green onions, tomatoes, Parmesan, and croutons.
