Crispy Chicken Potato Stick Snacks

Squeeze the excess moisture from the grated potatoes using a clean kitchen towel.
In a large bowl, combine the grated potatoes, shredded chicken, breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, pepper, parsley, and the beaten egg. Mix well until all ingredients are fully incorporated.
Shape the mixture into small stick-like shapes.
Heat vegetable oil in a large skillet over medium-high heat.
Fry the chicken potato sticks in batches, turning occasionally, until golden brown and crispy, about 3-4 minutes per side.
Remove from the skillet and drain on paper towels. Serve hot with your favorite dipping sauce.
