grew up with green beans, potatoes and ham. So I decided to put a fun twist on this family favorite. I have always wanted to try bacon as the ham element and what better way to cook this recipe than in a crockpot!
I am happy to report that this recipe was loved by the entire family. I was able to use vegetarian bacon to make this vegetarian friendly for Darryl, and it also turned out great. This quick and easy side is perfect for any family occasion.
“I make this dish often; I have never really measured the ingredients, but can give you a reasonable approximation. Note: Freeze leftover cooking liquid, and then add to bean soup, ham or cabbage dishes, or use to cook dumplings in. It’s delicious!”
Ingredients:
2 pounds (about 900g) baby potatoes, washed and halved
1 pound (about 450g) fresh green beans, trimmed
1.5 pounds (about 680g) ham, diced
1 onion, finely chopped
3 cloves garlic, minced
1 cup chicken brothInstructions:
1. Prepare Ingredients: Wash and halve the baby potatoes, trim the green beans, dice the ham, and chop the onion and garlic.
2.Layer Ingredients in Crockpot: Place the halved baby potatoes at the bottom of the crockpot, followed by the trimmed green beans. Add the diced ham on top.
3. Add Aromatics : Sprinkle the chopped onion and minced garlic over the ingredients in the crockpot.
4. Seasoning: In a small bowl, mix the chicken broth, dried thyme, dried rosemary, salt, and pepper. If you like a hint of tanginess, you can add Dijon mustard to the mix. Pour this seasoned broth over the ingredients in the crockpot.
5. Cooking: Cover the crockpot and cook on low for 6-8 hours or until the potatoes and green beans are tender.
6. Serve: Once everything is cooked, give it a gentle stir to combine the flavors. Adjust the seasoning if necessary. Sprinkle with fresh chopped parsley for a burst of color and freshness.
