Preheat your oven to 350 degrees and spray a 9×9 baking dish with non-stick spray.

In a large skillet over medium heat, crumble and cook the ground beef. Drain the grease once it’s cooked through.

Add the taco seasoning and water to the skillet, and cook for an additional 2 minutes.

In a medium mixing bowl, combine the drained tomatoes, Nacho Cheese Soup, and sour cream. Stir in the cooked beef.

Begin layering the lasagna: Start with 3 tortillas at the bottom of the prepared baking dish. Top with 1/3 of the meat mixture. Repeat these layers, finishing with a layer of tortillas on top. Sprinkle the grated cheese over the top.

Bake for 20 minutes or until the dish is hot and the cheese is melted and bubbly.

Serve your Mexican Taco Lasagna with optional toppings like chopped cilantro, guacamole, and extra sour cream, according to your preferences.

This Mexican-inspired lasagna is not only delicious but also versatile and convenient. It’s a fantastic meal option for busy weeknights and can be customized with your favorite toppings!
