Step 1:
I started the preparation by combining the red onions, with green diced onions, jalapeño pepper, tomatoes in a medium mixing bowl and I seasoned using salt. I set the bowl aside for later.

Next, I browned the ground beef in a large pan and drained well the excess fat, then I sprinkled the taco seasoning over the meat and mixed well.
Step 3:
After that, I brought the heavy cream with softened butter to a boil in a medium saucepan, whisking constantly until thickened.

I took the pan off the heat and added 2 cups of shredded cheese, seasoned with Cajun spice, and kept it warm.
Step 5:
At this step, I layered: four tortillas, after I cut them to fit the bottom of the dish, the cooked ground beef, shredded cheese, and tomato mixture in a 9.13-inches casserole.
Step 6:
And I repeated the layers until three layers are formed, concluding with the cheese sauce on the top.
Step 7:
Following that, I added the remaining cup of cheese on the top of the layers, and I placed the dish covered in a 400 degrees oven for around 20 minutes.
Step 8:
Once done, I removed the dish from the oven and let it cool, for serving, I garnished each plate with sour cream and green chopped onions.
