Orange Chicken Meatballs

Directions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a large bowl, combine the ground chicken, breadcrumbs, egg, garlic, ground ginger, salt, and black pepper. Mix until well combined.

Form the mixture into meatballs, about 1-inch in diameter, and place them on the prepared baking sheet.

Bake the meatballs in the preheated oven for 15-18 minutes, or until they are cooked through and slightly golden.

While the meatballs are baking, prepare the orange sauce. In a small saucepan, combine the orange juice, soy sauce, honey, rice vinegar, sesame oil, and red pepper flakes (if using). Bring to a simmer over medium heat.

In a small bowl, whisk together the cornstarch and water until smooth. Add this mixture to the saucepan, stirring constantly until the sauce thickens.

Once the meatballs are done, transfer them to a large bowl and pour the orange sauce over them. Toss gently to coat.

Sprinkle with sliced green onions and sesame seeds before serving. Enjoy!

Variations & Tips

If you’re looking for a lower-carb option, you can use almond flour instead of breadcrumbs. Feel free to adjust the sweetness of the sauce by adding more or less honey to your taste. For a spicier kick, increase the amount of red pepper flakes or add a dash of Sriracha to the sauce. And if you’re short on time, you can use pre-made chicken meatballs from the store and just whip up the sauce!
