How to prepare the puff pastry star:
Unroll the puff pastry
Spread the well-drained ricotta with the whey on the disk of dough
At the end you should obtain a homogeneous and uniform layer
Cut the puff pastry with a knife, leaving a few cm from the center and cut out 8 segments
Place a Slice of Meat at the base of each segment
Arrange 1/2 slice of chopped scamorza on the meat
Fold the dough over the filling into a triangle, starting at one edge.
Proceed in the same way on the other side, matching the two edges of the dough and sealing them well with your fingertips.
Divide each segment in half, this time starting from the center of the dough and reaching within 1 cm of the filling.
Fold the end of each corner inward, overlapping it with the ricotta.
Seal the dough with the olives
Garnish with halved cherry tomatoes
It smells like peeled dried oregano
Brush the dough with the egg yolk lightly beaten with the milk.
Sprinkle with poppy seeds.
