SCALLOPS WITH LEEK

In this recipe, a hint of garam masala spices up the dish when serving, as you would generally do with freshly ground pepper.

INGREDIENTS
1 lbs (500g) medium scallops
2 tbsp. tbsp olive oil
Salt and pepper to taste
3 tbsp. tablespoon butter
1 medium leek, julienned
1 small carrot, julienned
100g oyster mushrooms, julienned
½ cup white wine
1 C. tbsp Chinese oyster sauce
¼ cup heavy cream
2 tbsp. tbsp fresh tarragon or basil
1 large pinch garam masala, toasted and ground
