Shrimp Pasta with Tomatoes, Burrata Cheese, and Pine Nuts

Step 1: Cook the Pasta
Bring a large pot of water to a boil. Add pasta and cook according to the package instructions until al dente. Drain and set aside.

Step 2: Cook the Shrimp
Heat a large, high-sided skillet over medium heat. Add 2 tablespoons of olive oil. Once hot, add the shrimp in a single layer without overcrowding (cook in batches if necessary).

Season the shrimp with Italian seasoning, red pepper flakes, salt, and pepper. Cook for 3-4 minutes, flipping once or twice, until the shrimp turn pink and are cooked through. Be careful not to overcook them. Remove shrimp from the skillet and set aside.

Step 3: Cook the Tomatoes
In the same skillet, add 1 tablespoon of olive oil, halved cherry tomatoes, minced garlic, and ¼ teaspoon of salt. Cook over medium heat for about 5 minutes, or until the tomatoes soften and release their juices.

Step 4: Assemble the Dish
Add the cooked pasta to the skillet with the tomatoes. Pour in the lemon juice and toss everything together. Taste and adjust seasoning if needed.
Add the cooked shrimp on top of the pasta and gently break apart the burrata cheese over the dish.
Sprinkle the toasted pine nuts, extra red pepper flakes, and chopped parsley over the pasta. Serve immediately.
