Directions
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and sugar.

In another bowl, combine the mashed bananas, milk, beaten egg, vanilla extract, and melted butter.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
Drop spoonfuls of the batter onto the prepared baking sheet, leaving a little space between each fritter.
Bake in the preheated oven for 12-15 minutes, or until the fritters are golden brown and a toothpick inserted into the center comes out clean.
Allow the fritters to cool slightly on a wire rack before serving.
Variations & Tips
For a little extra crunch, consider adding a handful of chopped nuts, such as walnuts or pecans, into the batter. You can also substitute half of the all-purpose flour with whole wheat flour for a heartier texture. If you’re feeling indulgent, a handful of chocolate chips can turn these into a true treat. Don’t be afraid to experiment with spices—add a pinch of cloves or allspice for a slightly different flavor profile.
