Ingredients:
For the filling:

1 lb (450g) fresh spinach, washed and chopped (or 10 oz/280g frozen spinach, thawed and drained)
1 small onion, finely chopped
2-3 green onions, finely sliced
2 cloves garlic, minced
1/4 cup fresh dill, chopped
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped (optional)
10 oz (280g) feta cheese, crumbled
1/2 cup ricotta cheese (optional for creaminess)
2 eggs, lightly beaten
Salt and pepper to taste
1/4 teaspoon nutmeg (optional)
For the pastry:

1 package of phyllo dough, thawed (usually 16-18 sheets)
1/2 cup (120ml) olive oil or melted butter (for brushing)
