    1. Prepare the Batter:
      • In a bowl, whisk together the eggs, sugar, salt, milk, flour, melted butter, and warm water until smooth.
    1. Cook the Spinach Mixture:
      • In a pan, heat vegetable oil and cook the chopped onion until soft. Add garlic and spinach (fresh or thawed frozen), and cook until the spinach is tender. Season with salt and remove from heat.
    2. Make the Sauce:
        • In a separate pan, melt butter and whisk in flour. Gradually add milk, stirring constantly until the sauce thickens. Add cream cheese, mix until smooth, and season with nutmeg.

       

    3. Assemble and Bake:
      • Pour some sauce into a greased casserole dish. Layer the spinach mixture on top, then pour the remaining sauce over it. Sprinkle with mozzarella. Bake at 180°C (350°F) for 20 minutes, or until golden and bubbly.
