Preparation :
- Start by preparing the shortcrust pastry: in a bowl, mix the flour, grated lemon zest, egg yolk and soft butter until a sandy mixture forms.
- Pour the mixture into a mold covered with parchment paper and compact it well with a spatula and your fingers.
- Cut the apples into small pieces without peeling them and place them in the mould.
- Next, prepare the dough for the cake: in a bowl, mix the flour, icing sugar, 3 egg yolks, heavy cream, cream cheese and vanilla sugar until a homogeneous mixture and no lumps form.
- In another bowl, whip the egg whites until stiff and gently fold them into the previous mixture.
- Pour this mixture over the apples in the mold and bake at 180°C (Th 6) for 40 minutes.
- The best apple cake in the world is ready to be tasted.
