This recipe is better than most Chinese takeout versions

1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces

1/4 cup all-purpose flour

1/2 tsp black pepper

1/4 tsp salt

1/4 cup soy sauce

2 tbsp rice vinegar

2 tbsp ketchup

1 tbsp brown sugar

1 minced garlic clove

1/2 tsp grated fresh ginger

1/4 tsp red pepper flakes (optional for a spicy kick)

1 cup cashews

Cooked rice, for serving

Directions:

Combine flour, black pepper, and salt in a large bowl. Add the chicken and toss to coat thoroughly. Alternatively, use a zip lock bag for convenience.

In a separate bowl, whisk together soy sauce, rice vinegar, ketchup, brown sugar, garlic, ginger, and red pepper flakes to create the sauce.

Pour the sauce over the chicken, ensuring it’s evenly coated.

Transfer the chicken and sauce mix to a slow cooker. Sprinkle the cashews on top.

Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is tender and cooked through.

Serve the delicious cashew chicken over cooked rice, garnished with extra cashews if desired.
