Ingredients:
1 lb beef sirloin tips, cut into bite-sized pieces
1 sliced onion
8 oz sliced mushrooms
1 tbsp olive oil
1 tbsp Worcestershire sauce
1/4 cup dry red wine (plus extra for deglazing)
2.5 cups beef broth
Salt and pepper, to taste
2 tbsp cornstarch mixed with 1/4 cup cold water
Instructions:
Place onions and mushrooms in the slow cooker.
Season the beef with salt and pepper, sear until browned, then add to the slow cooker. Deglaze the skillet with a splash of red wine and add the scrapings to the slow cooker.
Add Worcestershire sauce, 1/4 cup red wine, and beef broth to the slow cooker. Season to taste.
Cook on low for 6-8 hours until beef is tender.
An hour before serving, mix cornstarch and water, then stir into the slow cooker to thicken the sauce.
Serve the beef tips and sauce over your choice of rice, noodles, or mashed potatoes.
