PREPARATION
Line a large sheet pan with parchment paper, then set aside.
Add corn syrup, sugar, and vinegar to a medium-sized saucepan and stir to combine. Place pan over medium-high heat and do not stir. Bring temperature to 300 degrees F.
Remove pan from heat and and mix in baking soda until mixture begins to expand.
Transfer to the prepared baking sheet and allow mixture to pool out, don’t worry about spreading it out.
Allow candy to fully cool, then break into small pieces.
Place chocolate coating in a small bowl and microwave in 30 second increments until fully melted. Dip candy in chocolate and place back on parchment to set.
Once fully set, store in an airtight container.
