Preparing chicken strips with vegetables is a healthy and delicious option, be sure to marinate the chicken to enhance its flavor and texture before cooking.

Preparation:

1. In a large bowl, mix the chicken strips with the soy sauce and grated ginger (if you are using ginger). Marinate for at least 15-20 minutes.

2. While the chicken is marinating, prepare the vegetables by cutting them into strips or slices as indicated in the ingredients list.

3. Heat a large skillet or wok over medium-high heat and add 1 tablespoon of vegetable oil.

4. When the oil is hot, add the marinated chicken and cook until golden brown and cooked through. Remove the chicken from the pan and place on a plate.

5. In the same pan, add another tablespoon of oil if necessary and add the peppers, onion, carrot and minced garlic. Sauté the vegetables for a few minutes until tender but still crisp.

6. Add the cooked chicken strips back to the pan with the vegetables and mix everything together. Cook for a few more minutes to let the flavors blend.

7. If desired, add salt and pepper to taste. You can adjust the seasonings according to your preferences.

8. Once everything is well mixed and hot, remove the pan from the heat.

9. Serve the chicken strips with vegetables over cooked rice, egg noodles or as desired. If you prefer, you can drizzle some chili sauce, sesame seeds or chopped green onion on top for an extra touch of flavor and decoration.
