Traditional Irish Beef Stew

Instructions:
1. Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set it aside.

2. In the same pot, add the chopped onion and minced garlic. Sauté for a few minutes until the onion becomes translucent and the garlic is fragrant.

3. Sprinkle the flour over the onions and garlic, and stir well to coat them. This helps thicken the stew.

4. Gradually pour in the beef broth, stirring constantly to avoid any lumps. Add the Guinness stout (if using), tomato paste, Worcestershire sauce, bay leaves, thyme, salt, and pepper. Stir to combine.

5. Return the browned beef to the pot, along with any accumulated juices. Add the chopped carrots, potatoes, and parsnips (if using). Stir well to combine all the ingredients.

6. Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for about 2 to 3 hours, or until the beef is tender and the flavors have melded together. Stir occasionally and check the seasoning, adjusting with salt and pepper if needed.

7. Once the stew is done, remove the bay leaves. Serve the Traditional Irish Beef Stew hot, garnished with chopped fresh parsley if desired. It pairs well with crusty bread or mashed potatoes.
